Is what I am doing at the moment OK?
I am currently training my conure to perch on my finger. I got him yesterday, and after I practiced the command with a stick/movable perch, my bird has gotten down very well. I know the process takes a few days, but I wanted to try and use my finger today. I did, and as he did with the stick, he started to bite my finger really hard after he finally perched on it, to the point where I had to make him perch back on his regular perch. How would I be able to avoid this? Just over time?
And he seems to be eating quite a lot.
I've given him about 10-12 hand-fed seeds/bird food (banana, various food in the organic diet bag I have) for good deeds and to eat today. Is that too much?

It takes more than a day to train any bird to do anything. Depending on his background, if he has been abused or ignored, it could easily take months. Just be patient. Don't yell or hit if you get bit, and - this is hard - don't pull your hand away. Any kind of reaction is exactly what the bird is looking for, and he will give up if he doesn't get a rise out of you.
As far as food goes, seeds and millet are not good for birds in large quantity - they are like twinkies are to people. If the bird has not been previously provided a good diet, he might not like the foods that are good for him, but keep offering anyway: fresh veggies and fruits, grains, and a pelleted food made specifically for your size bird.
10-12 pieces of any kind of food is meager for a conure. You need to provide a bowl for food and keep it filled. And also a bowl of fresh clean water (clean everyday).
